CHRISTMAS VENISON

They could be on to something in France. Farmer co-op PPCS reports that it has a good trade selling chilled venison to a customer in France for the pre-Christmas market. It seems that instead of a Christmas ham, they go for a Christmas haunch of venison. PPCS has been dealing with French game processor and distributor Villettes Viande for four years and representatives from the family-owned business visited New Zealand earlier in the year. One Villettes customer, a large supplier of poultry and prepared foods called LDC takes quite a volume of chilled bone-in and boneless legs for sales during December.
